Full Recipe:

Ingredients

  • 1 cup frozen blueberries

  • ½ cup salted butter, softened (or plant-based butter for vegan version)

  • ¼ cup granulated white sugar

  • ¼ cup light brown sugar

  • 1 ½ cups all-purpose flour

  • ¾ tsp baking powder

  • ⅔ cup white chocolate bar, chopped (or vegan white chocolate)

Directions

  1. Gather and measure the ingredients. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Thaw the frozen blueberries over medium-high heat. Once they are mushy, remove them from the heat and let them cool.

  3. Beat the butter (or plant-based butter) and sugars until creamy. Use a stand mixer for best results.

  4. Add the blueberries to the mixture and mix on high speed to achieve fluffy dough.

  5. Add the flour and baking powder. Mix gently—do not overmix.

  6. Fold in the chopped white chocolate.

  7. Cover the dough with plastic wrap and chill in the fridge until firm.

  8. Use a cookie scoop to form dough balls and place them on the lined baking sheet.

  9. Bake the cookies for 9–10 minutes, or until the edges are crisp and slightly brown.

  10. Let the cookies cool for 5 minutes before serving.
