Ingredients

  • 1 tablespoon vegetable oil

  • 1 small brown onion, diced

  • 2 cloves garlic, minced

  • 500g (1.1lb) beef mince (ground beef)

  • ¼ cup taco seasoning

  • 2 tablespoons tomato paste

  • 2½ cups beef stock (625ml)

  • 1 cup taco sauce (250ml)

  • ¾ cup tinned black beans

  • 2 large roasted peppers, diced (or 1 cup chopped)

  • 250g (8.8oz) large pasta shells

  • ½ teaspoon fine sea salt

  • ½ cup sour cream (light or full fat)

  • 1½ cups shredded cheddar cheese (not packed)

Directions

  1. Sauté the onion and garlic: Heat vegetable oil in a large skillet over medium heat. Add the onion and cook until translucent (4-5 minutes). Add garlic and cook for another minute.

  2. Cook the beef: Turn up the heat to medium-high, add the beef mince, and cook until browned. Drain excess fat.

  3. Add seasoning and tomato paste: Stir in taco seasoning and tomato paste, cooking for another minute to combine.

  4. Add liquids and pasta: Add beef stock, taco sauce, black beans, roasted peppers, pasta, and salt. Stir to combine.

  5. Cook the pasta: Bring the mixture to a boil, then cover the pan with a lid. Reduce heat and cook for 10-15 minutes or until the pasta is al dente, stirring occasionally.

  6. Finish the dish: Once the pasta is cooked, stir in sour cream and remove from heat. Add cheddar cheese and mix until it melts and becomes creamy.

  7. Serve and enjoy: Serve warm with optional toppings like fresh cilantro, jalapenos, or avocado.
