These Smothered Pork Chops are pure comfort food—tender boneless pork chops baked over a bed of rice in a creamy sauce, topped with melty cheddar, mozzarella, and crispy bacon. This quick and easy casserole comes together in just 40 minutes and is perfect for weeknight dinners when you want something hearty, cheesy, and satisfying.

Ingredients

  • 4 boneless pork chops (about 2 lbs)

  • ½ tsp seasoned salt

  • 1 tbsp vegetable oil

  • 2 cups cooked rice

  • 1 (10.5 oz) can unsalted cream of chicken soup

  • 1¼ cups milk

  • ¾ cup shredded mozzarella cheese

  • ½ cup shredded cheddar cheese

  • 8 slices bacon, cooked and chopped

Directions

  1. Preheat oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with cooking spray.

  2. Spread cooked rice evenly on the bottom of the prepared pan.

  3. Season pork chops with seasoned salt. Heat oil in a skillet over medium-high heat and sear pork chops for 2–3 minutes per side until golden brown. Arrange pork chops on top of the rice.

  4. In a small bowl, whisk together cream of chicken soup and milk. Pour mixture over the pork chops.

  5. Bake uncovered for 25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

  6. Remove from oven, sprinkle with mozzarella, cheddar, and cooked bacon. Return to oven for 5–10 minutes until cheese is melted.

  7. Serve hot with your favorite sides.
