These S’mores Brownies combine three decadent layers for the ultimate treat: a buttery cookie crust, a rich and fudgy chocolate brownie, and a fluffy, toasted meringue topping. Ingredients

Cookie Crust:

  • 120 g digestive or graham crackers

  • 40 g butter

Brownie:

  • 60 g butter, melted

  • 50 g semi-sweet dark chocolate chips

  • 20 g unsweetened Dutch cocoa powder

  • 85 g granulated sugar

  • 85 g dark brown sugar

  • 2 large eggs, room temperature

  • 45 g vegetable or canola oil

  • 1 tsp vanilla extract

  • 50 g all-purpose flour

  • 2 tsp cornstarch

  • ¼ tsp salt

Meringue:

  • 90 g egg whites (about 3 large)

  • 180 g granulated sugar

  • ½ tsp vanilla bean paste

Directions

  1. Preheat oven to 160°C (325°F) conventional. Line a 20×20 cm (8×8 inch) square pan with parchment paper.

  2. Make Cookie Crust: Crush cookies in a food processor until fine. Mix in melted butter, press firmly into pan, and bake for 10 minutes.

  3. Make Brownie Batter: Sift flour, cornstarch, and salt; set aside. Melt butter and chocolate together, stir in cocoa powder. Whisk in both sugars, then eggs. Add oil and vanilla, whisk to combine. Gently fold in dry ingredients. Pour over baked crust and smooth. Bake 30–35 minutes. Cool completely.

  4. Make Meringue: In a heatproof mixing bowl, whisk egg whites and sugar over simmering water until sugar dissolves. Transfer to stand mixer and beat on high for 5–6 minutes until stiff peaks form. Beat in vanilla.

  5. Assemble: Remove cooled brownie from pan, spread meringue on top, and torch with a blowtorch or broil briefly until golden. Slice with a hot knife for clean cuts.
