Ingredients

  • 2 cups cooked salmon (fresh or canned), flaked

  • 1/2 cup breadcrumbs

  • 1/4 cup finely chopped onion

  • 2 tablespoons chopped parsley

  • 1 tablespoon Dijon mustard

  • 1 egg

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • 2 tablespoons olive oil for frying

Directions

  1. In a large bowl, combine the salmon, breadcrumbs, onion, parsley, mustard, egg, lemon juice, salt, and pepper. Mix until just combined.

  2. Shape the mixture into small patties, about 2 inches in diameter.

  3. Heat olive oil in a skillet over medium heat.

  4. Fry the salmon cakes for about 3-4 minutes per side, or until golden brown and heated through.
