Ingredients

  • 2/3 cup sugar

  • 2 egg yolks

  • 1 teaspoon vanilla extract

  • 1 tablespoon finely chopped fresh rosemary

  • Orange marmalade (for filling)

  • Powdered sugar (optional, for dusting)

Directions

  1. Preheat the Oven:

    • Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.

  2. Prepare the Dough:

    • Using an electric mixer, beat together butter and sugar on medium-high speed until light and fluffy, about 2 to 3 minutes.

    • Beat in egg yolks and vanilla extract until fully combined.

    • Add the flour, rosemary, and salt, and mix until the dough comes together in a ball.

  3. Chill the Dough:

    • Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
