Prepare the Dough:
Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
In the bowl of a stand mixer, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and creamy (about 2-3 minutes). Add the egg and vanilla extract and mix until fully combined. Gradually add the dry ingredients, mixing until just incorporated. -
Form the Cookies:
Scoop out about one tablespoon of dough, roll it into a ball, and roll it in sanding sugar. Place the dough balls about 2 inches apart on the prepared baking sheets. Use your thumb to make an indent in the center of each cookie. -
