1/4 cup maple syrup (can substitute with honey, agave, or date syrup)
-
1 1/4 cup oat flour
-
1/2 tsp cinnamon
-
1/4 tsp nutmeg
-
1/4 tsp ground ginger
-
1/2 cup shredded carrots (freshly grated for the best flavor)
-
1/2 cup white chocolate chips (melted with 1 tbsp coconut oil)
Directions
-
In a large mixing bowl, combine maple syrup, almond butter, cinnamon, ground ginger, and nutmeg. Mix well using a spatula.
-
Add in oat flour and shredded carrots. Stir until the mixture is fully incorporated.

Use a cookie scoop or tablespoon to form the dough into bite-sized balls and place them on a lined baking sheet.
-
Freeze the balls while you melt the white chocolate with coconut oil in a microwave, stirring every 30 seconds.
-
Once melted, dip the carrot cake bites in the white chocolate and return them to the lined baking sheet. Freeze for 1-3 minutes, then drizzle more white chocolate over the top.
