Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 cup fresh mozzarella cheese, shredded or in small cubes

  • 2 tablespoons pesto sauce

  • 2 cups tomato sauce (preferably homemade or marinara)

  • 2 teaspoons Italian seasoning

  • Salt and pepper, to taste

  • Fresh basil, for garnish (optional)

  • ½ cup Parmesan cheese, grated (for topping)

Directions

  1. Preheat the oven to 375°F (190°C).

  2. Prepare the chicken: Cut a pocket into each chicken breast by slicing horizontally through the thickest part of the meat, being careful not to cut all the way through.

  3. Stuff the chicken: Stuff each chicken breast with mozzarella cheese and pesto sauce. Season with salt, pepper, and Italian seasoning.

  4. Cook the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes per side until golden brown.

  5. Add tomato sauce: Once the chicken is seared, pour the tomato sauce over the chicken and sprinkle Parmesan cheese on top.
