1 1/2 cups diced mango chunks (defrosted if frozen)

1 medium carrot, steamed until soft

2 tablespoons honey (or more to taste)

1/4 cup water

5 tablespoons grass-fed beef gelatin powder
Directions

Line a 9″ bread loaf pan with parchment paper and lightly spray with coconut oil cooking spray.

In a high-speed blender, combine mango, steamed carrot, honey, and water. Blend for at least 5 minutes until the mixture is extremely smooth.

Taste the puree, and if it isn’t sweet enough, add more honey one tablespoon at a time, blending again after each addition.

Pour the puree into a wide-bottomed saucepan.

Sprinkle the gelatin evenly across the surface of the mixture. Do not stir. Let it sit for 5 minutes until the surface appears wrinkled.

Turn the heat to medium and whisk continuously. The gelatin will start to dissolve. Continue whisking until the mixture is completely smooth, but be careful not to let it boil.

Pour the mixture into the prepared loaf pan and smooth the surface with a spatula.

Let it set in the refrigerator for at least 3–4 hours or overnight, covered.

Once set, use small cutters or scissors to portion the mixture into fun shapes.
