Full Recipe:
Ingredients
-
1 beef roast (3 to 4 lbs)
-
Salt, for seasoning
-
2 tbsp vegetable oil
-
2 medium onions, chopped
-
4 cloves garlic, minced
-
2 tbsp fresh ginger, grated
-
2 tbsp gochujang paste (Korean chili paste)
-
2 tbsp brown sugar
-
1/4 cup soy sauce
-
2 cups beef stock
-
Rice, cilantro, and kimchi for serving
Directions
Oven Method:
-
Preheat the oven to 350°F with a rack in the lower third.
-
Pat the beef dry and season with salt. Heat oil in a Dutch oven over medium-high heat. Brown the beef in batches, about 10 minutes per side. Transfer the beef to a plate.
-
Reduce heat to medium and sauté onions in the Dutch oven for 4 minutes. Add garlic and ginger, cooking until fragrant (about 1 minute).
-
Stir in gochujang paste, brown sugar, and soy sauce, mixing well. Return the beef to the pot with any accumulated juices.
-
Add the beef stock and bring to a simmer. Cover and transfer to the oven. Cook for 2 hours, or until the meat is fork-tender and easily shreds.
-
Serve with rice, cilantro, and kimchi.
Slow Cooker Method:
-
Follow the same instructions as the oven method to brown the beef and prepare the aromatics. Transfer everything to the slow cooker.
-
Stir in the gochujang, brown sugar, soy sauce, and the remaining beef stock.
-
Cover and cook on HIGH for 6 hours or on LOW for 8 to 9 hours, until the beef is tender.
-
Serve with rice, cilantro, and kimchi.
Instant Pot Method:
-
Brown the beef using the Sauté mode, then transfer to a plate.
-
Sauté onions, garlic, and ginger in the Instant Pot. Add gochujang, brown sugar, soy sauce, and beef stock.
-
Return the beef and its juices to the pot. Lock the lid and cook on Pressure Cook mode for 1 hour. Let the pressure release naturally for 15 minutes, then quick release.
-
Serve with rice, cilantro, and kimchi.
