Ingredients

  • 1 cup ketchup

  • 3 tablespoons brown sugar

  • 2 teaspoons Worcestershire sauce (divided)

  • 1 tablespoon olive oil

  • ½ onion, diced

  • 3 garlic cloves, minced

  • 1 carrot (¾ cup), shredded

  • 1 celery stalk (⅓ cup), shredded

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • ½ cup breadcrumbs

  • 3 tablespoons milk (any variety)

  • 1 egg + 1 egg white

  • 1 lb ground chicken (can substitute with ground turkey)

Directions

  1. Preheat your oven to 400°F (200°C). Prepare a loaf pan by lining it with parchment paper or spraying with nonstick spray.

  2. In a small bowl, combine ketchup, brown sugar, and 1 teaspoon Worcestershire sauce. Set aside for the glaze.

  3. Heat olive oil in a skillet over medium heat. Add onions, garlic, shredded carrots, and celery. Cook until onions are soft and translucent.

  4. In a large mixing bowl, beat the egg and egg white. Add breadcrumbs and milk, allowing the breadcrumbs to soak up the mixture.

  5. Add the ground chicken and the sautéed vegetables to the bowl. Stir in half of the ketchup mixture (about ½ cup). Season with salt and pepper. Mix to combine.

  6. Transfer the mixture into the loaf pan and smooth the top. Spread the remaining ketchup glaze over the top of the meatloaf.

  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 30 minutes, or until the internal temperature reaches 165°F (74°C).

  8. Allow the meatloaf to cool slightly before slicing and serving.
