Prepare the Marinade:
In a small bowl, combine olive oil, lemon zest, garlic, rosemary, oregano, and optional red pepper flakes. Season with kosher salt and black pepper. Add the steaks to a resealable bag or airtight container and pour the marinade over them. Rub the marinade into the steaks, making sure they’re well-coated. Let the steaks marinate in the refrigerator for at least 12 hours (or up to 2 days). -
Prepare the Steak for Grilling:
About 30 minutes before grilling, remove the steaks from the refrigerator to allow them to come to room temperature. Pat the steaks dry with a paper towel to remove excess marinade, then season with additional salt and pepper. -
