2 (16.5-oz.) packages refrigerated chocolate chip cookie dough

1/2 gallon vanilla ice cream, softened

1 cup mini chocolate chips

Preheat the oven to 350°F (175°C). Line two 9-inch cake pans with parchment paper. Press 1 package of cookie dough into the bottom of each prepared pan. Bake for about 20 minutes, or until golden. Let the cookies cool in the pans for 10 minutes, then remove and freeze for 30 minutes.

Assemble the chipwich: Once the cookies are frozen, flip one over so it’s flat-side up. Scoop the softened vanilla ice cream onto the cookie, smoothing the top with a spatula to create an even layer. Place the second cookie (flat-side down) on top, pressing gently to push the ice cream out to the sides. Smooth the ice cream along the sides of the sandwich and press the mini chocolate chips into the ice cream to cover it completely.

Freeze the cake: Set the assembled ice cream sandwich on a serving plate and freeze until firm, about 2 hours.
