Ingredients

  • 3 cups leftover cooked spaghetti

  • 3 tablespoons olive oil

  • 2 cloves garlic, smashed and peeled

  • 2 eggs (room temperature, separated)

  • ¼ cup grated Parmesan cheese (divided)

  • Salt and freshly cracked black pepper to taste

  • Minced fresh parsley for garnish (optional)

Directions

  1. Separate the Eggs: In a small bowl, separate the egg whites and egg yolks. Place the egg whites in one bowl and the yolks in a larger bowl. Whisk the egg yolks with 2 tablespoons of the Parmesan cheese and set aside.

  2. Infuse the Oil: Heat the olive oil in a large skillet over medium-low heat for 1 minute. Add the garlic and let it infuse into the oil for about 3-4 minutes, making sure it doesn’t burn. Remove the garlic from the oil.

  3. Fry the Spaghetti: Add the leftover spaghetti to the skillet and sauté over medium-high heat for 5 minutes, tossing occasionally. The pasta should become crispy on some sides but remain tender on others.

  4. Add the Egg Whites: Turn the heat down to low. Add the egg whites to the pan and gently stir to combine with the pasta. Allow the eggs to cook with the pasta, making sure they don’t scramble too much but become slightly fried.

  5. Mix with the Egg Yolk Mixture: Slowly add the egg yolk and Parmesan mixture to the pasta, tossing gently so that the yolks don’t scramble but combine into a creamy sauce. Add the remaining Parmesan cheese and toss to coat.

  6. Serve: Garnish with fresh parsley (optional) and serve immediately while warm.
