⅔ cup granulated sugar, divided

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

In a large bowl, beat the egg yolks with half of the sugar and vanilla extract until thick and pale.

In a separate bowl, beat egg whites until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.

Gently fold the egg whites into the yolk mixture.
