  • 8 oz lo mein noodles (or any long noodle)

  • 1 tablespoon olive oil

  • 1 cup sliced bell peppers (any color)

  • 1 cup sliced carrots

  • 1 cup broccoli florets

  • 1/2 cup sliced green onions

  • 2 cloves garlic, minced

  • 1/4 cup soy sauce

  • 2 tablespoons hoisin sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon grated fresh ginger (optional)

  • 1 teaspoon sugar

Directions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.

  2. Heat olive oil in a large pan over medium heat. Add the bell peppers, carrots, and broccoli. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
