Ingredients

  • 1 – 1 ¼ pounds steak or beef fillet, sliced

  • 1 cup butter (or 2 sticks)

  • 1 cup all-purpose flour

  • 1 can (28 oz) canned tomatoes, diced

  • 3 stalks celery, chopped

  • 1 large carrot, chopped

  • 1 onion, chopped

  • 2 cups mushrooms, sliced

  • 2 tablespoons Worcestershire sauce

  • 1 cup heavy or whipping cream (35%), more or less according to taste

  • 10 cups beef broth

  • 1 teaspoon salt (more or less to taste)

  • 1 teaspoon pepper (more or less to taste)

  • Gravy browning (optional, for darkening)

  • Fresh parsley for serving (optional)

Directions

  1. Prepare Ingredients: Chop the onion, carrot, celery, and slice the mushrooms. Set aside.

  2. Brown Beef: In a large pot, over medium-high heat, melt the butter. Brown the sliced beef for about 3 to 4 minutes.

  3. Add Flour: Reduce heat to medium and add the flour. Stir until smooth and combined.

  4. Cook Vegetables: Add the chopped onion, mushrooms, carrot, and celery. Cook for about 10 minutes, stirring occasionally.

  5. Add Broth & Tomatoes: Add the undrained canned tomatoes, beef broth, and Worcestershire sauce. Stir to combine. Season with salt and pepper.

  6. Simmer: Let the soup simmer for about 1 to 1 ½ hours, allowing the beef to become tender and flavors to meld. Taste and adjust seasoning as needed.

  7. Add Cream: Five minutes before serving, add the heavy cream and stir to combine. Heat through.
