Ingredients

For the Fish Sticks:

  • 1 ½ pounds white fish (walleye, cod, tilapia, etc.), skin removed and cut into strips

  • 1 egg

  • 2 cups panko bread crumbs

  • 2 teaspoons garlic powder

  • 1 ½ teaspoons salt, divided

  • ½ teaspoon cracked black pepper

  • 1 zest of lemon

For the Tartar Sauce:

  • ½ cup low-fat plain yogurt

  • 2 tablespoons finely chopped dill pickle

  • 1 tablespoon pickle juice

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Directions

  1. Prepare the Fish Sticks: Preheat the oven to 425°F (220°C) and line a baking sheet with foil. Lightly coat it with cooking spray.

  2. Coat the Fish: In a shallow dish, beat the egg until light and fluffy. In another shallow dish, combine panko breadcrumbs, garlic powder, 1 teaspoon of salt, black pepper, and lemon zest.

  3. Bread the Fish: Sprinkle both sides of the fish strips with the remaining ½ teaspoon salt. Dip each piece of fish into the egg, then coat it with the panko mixture, pressing lightly to ensure an even coating.

  4. Bake the Fish: Place the coated fish on the prepared baking sheet and lightly spray them with cooking spray. Bake for about 25 minutes or until golden brown and crispy.

  5. Make the Tartar Sauce: While the fish bakes, combine the yogurt, chopped dill pickle, pickle juice, lemon juice, and salt and pepper in a small bowl. Mix well and refrigerate until ready to serve.

  6. Serve: Once the fish sticks are golden and crispy, remove from the oven and serve with the homemade tartar sauce.
