1 1/2 cups packed fresh basil leaves

1/3 cup grated Parmesan cheese

2 tablespoons pine nuts

4 cloves garlic

1 teaspoon kosher salt

1 tablespoon lemon juice

1/4 cup olive oil

1/4 cup water

For the Bread:

2 (8-inch) Italian bread loaves

2 cups shredded mozzarella cheese

Directions

Prepare the Pesto: In a blender or food processor, combine basil, Parmesan cheese, pine nuts, garlic, salt, black pepper, and lemon juice. Start blending and drizzle in olive oil. Add water gradually until you reach the desired pesto consistency (about 3/4 cup).

Prepare the Bread: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone liner. Slice the bread into 3/4-inch thick slices, but don’t cut all the way through; keep the bottom intact.

Assemble the Bread: Spread pesto in between each slice of bread and stuff mozzarella cheese between the slices. Drizzle some more pesto over the top and sprinkle the remaining mozzarella cheese on top.

Bake: Tent the bread loosely with foil and bake for about 15 minutes, until the cheese is melted inside. Remove the foil and bake for another 5 minutes to help brown the top cheese.
