Ingredients

  • 1 lb boneless, skinless chicken tenders

  • ½ teaspoon ground cumin

  • ½ teaspoon garlic powder

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoons olive oil

  • ½ cup onion, minced

  • 2 tablespoons jalapeños, minced (seeds and membranes removed for mild heat)

  • ¾ cup chicken broth

  • 3 oz cream cheese, cut into chunks

  • ½ cup shredded cheddar and jack cheese (or any preferred cheese)

  • Optional: extra jalapeños, cheese, and cilantro for garnish

Directions

  1. Brown the Chicken: In a small bowl, combine cumin, garlic powder, salt, and pepper. Season both sides of the chicken tenders with the spice mix. Heat olive oil in a large skillet over medium-high heat and brown the chicken for 5 minutes on each side. Set the chicken aside (it will cook further in the sauce).

  2. Make the Jalapeño Cheese Sauce: Lower the heat to medium-low. Add minced onion and jalapeños to the skillet and sauté for about 3 minutes until softened. Add the chicken broth and scrape the browned bits from the pan. Add cream cheese and stir until melted.

  3. Finish the Chicken in the Sauce: Sprinkle shredded cheese into the sauce and stir until melted. Return the chicken tenders to the skillet and coat them with the cheesy sauce. Let them cook in the sauce for 3-5 minutes until they reach an internal temperature of 165°F.

  4. Serve and Garnish: Serve immediately over rice, cauliflower rice, or your choice of side. Garnish with extra cheese, jalapeños, or cilantro for added flavor.
