150g (1 cup) self-raising flour

40g butter, chilled, chopped

For the Caramel Syrup

185ml (3/4 cup) golden syrup

100g (1/2 cup, firmly packed) brown sugar

50g butter

185ml (3/4 cup) thickened cream

Prepare the Dumplings: Preheat the slow cooker on high. In a bowl, combine the self-raising flour and caster sugar. Use your fingertips to rub the butter in until the mixture resembles coarse breadcrumbs. Make a well in the center, add the milk, and use a flat-bladed knife to stir until the mixture just comes together. Divide the dough into 12 portions and roll into balls.

Make the Caramel Syrup: In a saucepan, combine the golden syrup, brown sugar, butter, cream, and 125ml (1/2 cup) water over medium-low heat. Stir until the sugar dissolves and the syrup becomes smooth. Bring to a boil and remove from heat.

Cook the Dumplings: Pour half of the caramel syrup into the preheated slow cooker. Gently place the dumplings into the syrup, then pour the remaining syrup over the top. Cover and cook for 1 1/2 hours or until the dumplings are cooked through.
