Two 14-ounce blocks of extra-firm tofu, packed in water

2/3 cup cornstarch

3 large eggs

Kosher salt and freshly ground black pepper

2 cups panko breadcrumbs

1 teaspoon vegetable oil

2 teaspoons grated fresh ginger

1 teaspoon grated garlic

1/2 cup apricot preserves
-
1 teaspoon toasted sesame oil

1 teaspoon apple cider vinegar

1/2 to 1 teaspoon Asian chili sauce

Preheat the oven to 425°F and generously coat a rimmed baking sheet with cooking spray.

Drain the tofu and press out excess moisture. Slice each block into 8 pieces, about 3 1/2 inches long by 1 3/4 inches wide and 1/2 inch thick.

Lay tofu pieces on paper towels, blot them dry, and sprinkle with salt. Let them stand.

Prepare a breading station: Place cornstarch on a plate, whisk eggs with salt and pepper in a shallow bowl, and place panko breadcrumbs mixed with salt and pepper in another shallow bowl.

Coat each tofu piece in cornstarch, dip in egg, then coat with panko. Arrange the breaded tofu on the prepared baking sheet and generously spray with cooking spray.

Bake for 30-35 minutes, turning the baking sheet halfway through, until the tofu is golden and crispy.

While baking, heat vegetable oil in a small nonstick skillet over medium heat. Add ginger and garlic, and cook until fragrant (about 1 minute). Reduce heat, stir in apricot preserves, sesame oil, vinegar, and chili sauce. Heat through for another minute and season with salt.
