2 sheets ready-rolled puff pastry or 200g frozen puff pastry, rolled thinly

1 tbsp olive oil

1 garlic clove, crushed

200g bacon rashers, finely chopped

1 onion, finely chopped

2 tbsp pesto (basil or sun-dried tomato)

2 tbsp finely chopped herbs

1 tbsp chopped basil

2 tbsp grated cheese

Make the filling: Heat olive oil in a medium frying pan. Sauté garlic and bacon until bacon is crisp. Add onion and pesto, cook for 2 minutes. Stir in basil and grated cheese. Let the mixture cool (can be done ahead).

Prepare pastry: Roll the pastry sheets thinner if needed. Cut lengthwise into two long strips. Spread half the filling on each piece.

Shape rolls: Fold each side inward to meet in the center. Press gently, then fold each side again to meet in the middle. Press to flatten.

Chill rolls: Wrap each roll in cling film and freeze for 1 hour.

Preheat oven: Heat to 220°C (425°F), and lightly oil two baking trays.

Slice and bake: Cut chilled rolls into 1.5cm slices. Place flat on trays with spacing. Bake uncovered for ~12 minutes or until golden.

To freeze and reheat: Store baked rolls in an airtight container and freeze for up to 3 months. Defrost at room temperature for 1 hour, then warm in the oven at 180°C for 4–5 minutes.
