450g (3 cups) new potatoes

1 teaspoon salt

1 red bell pepper, deseeded and diced (1-1.5 cm)

3 garlic cloves, finely chopped

2 tablespoons rapeseed (canola) oil

½-1 teaspoon dried chili flakes

1 lemon, zest and juice

30g (⅓ packed cup) fresh coriander, chopped

Coarse sea salt to taste
Directions
1. Prepare the Potatoes:
Bring a medium saucepan of salted water to a boil. Add the new potatoes and cook for about 10 minutes, until tender. Drain and allow them to steam dry for 2-3 minutes. Once dry, cut the potatoes into 1.5-2 cm pieces.
2. Cook the Potatoes and Vegetables:
Heat the rapeseed oil in a large frying pan over medium-high heat. Add the potatoes, red pepper, and dried chili flakes. Cook for 10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
3. Add Garlic and Coriander:
Add the garlic and half of the chopped coriander to the pan. Cook for an additional 3 minutes, stirring well to combine the flavors.
4. Finish and Serve:
Remove the pan from the heat and stir in the lemon zest, remaining coriander, and fresh lemon juice to taste. Sprinkle with coarse sea salt and serve immediately.
