Ingredients

  • 150g dried wheat noodles (or 300g fresh noodles)

  • ½ cup fresh coriander, finely chopped

  • 2 spring onions, finely chopped

  • 1 tablespoon homemade crispy chilli oil (optional)

For the Chilli Garlic Sauce

  • 1 tablespoon chilli powder or flakes (adjust to taste)

  • 4 cloves garlic, minced

  • ½ tablespoon white sugar

  • 3 tablespoons neutral oil (e.g., sunflower, grapeseed, or canola)

  • 1½ tablespoons soy sauce

  • ½ tablespoon black vinegar

  • ½ teaspoon sesame oil

Directions

  1. Prepare the Chilli Garlic Sauce
    In a large heatproof bowl, combine chilli powder, garlic, and sugar. In a small saucepan, heat oil until very hot (you’ll see small ripples or slight smoking). Carefully pour the hot oil into the chilli-garlic mixture, and stir immediately. Add soy sauce, black vinegar, and sesame oil, mixing well.

  2. Cook the Noodles
    Cook noodles according to package instructions (typically 3-4 minutes for dried noodles). Drain and add the hot noodles to the bowl with the chilli garlic sauce.

  3. Serve
    Top with finely chopped spring onions, coriander, and crispy chilli oil (if using). Mix everything well and serve immediately. Optionally, sprinkle sesame seeds on top for extra texture.
